Harbor House Collaborative is happy announce our new innovative hands on approach to teaching and learning almost any life skill, living skill or Bible study.  Students will learn how to cook healthy wholesome recipes and meals using organic and fresh ingredients. Woven into the class is a duel learning of the life skill. Curriculums feature a refreshing blend of honesty, humor, hands on participation and solid learning through authenticity effectively impacting the participant and enhancing the learning experience. Students not only take home a meal or a series of meals for themselves and family but come away with the knowledge and skills to become truly productive and self –sufficient.
We take great joy in helping our clients come to a place of productivity in their lives after completing a program of recovery.  Many clients come to HHC unable to read, lacking the skills to develop a resume, and many are unable to interact socially.  A package of basic living skills training, vocational assistance, remedial reading and money management classes supplement linkages with medical, dental and benefits eligibility resources.  Many Harbor House residents move from the ranks of the "unemployable" to "productive citizen" in a matter of months due to the intense nature of these case management services.

Collaborative Fiesta Salad & Chips
3 lbs ground turkey
1 sm white onion, finely chopped
1 light sprinkle of kosher salt
2.5 pks taco seasoning
2 cups water
2 tbs olive oil
1 tb worcestershire  sauce
1 tsp cumin
2 bags shredded lettuce
3 Roma tomatoes, deseeded and chopped
2 cans black beans, rinsed and drained
1 cup frozen corn, thawed
3 sm green onions, chopped
2 cups shredded Mexican cheese
2 limes cut into wedges
2 avocadoes (optional)
Flour tortilla chips, homemade or bought

Directions: In a large skillet, heat olive oil and add ground turkey and salt. When meat is just slightly pink, add chopped white onion, worcestershire sauce, cumin, taco seasoning and water.

Allow mixture to simmer until liquid is absorbed. While meat is simmering, on a large serving platter, assemble lettuce, chopped tomatoes, black beans and corn around the edges of platter. Leave enough room in center for meat. Put chopped green onion, cheese, lime wedges in separate dishes for personal garnishes. If using avocadoes, squeeze the juice of two lime wedges to prevent browning. The avocadoes may be added to the platter or as a garnish. Put meat mixture in center of platter. Put tortilla chips on plate.  Serves 12-14
